Lentil Soup

Here is a great slow cooker recipe for Lentil Soup. My alterations are in blue
Crock Pot Lentil Soup

1 pound dried lentils, sorted and rinsed (any type, I prefer green)
2 cans (14 1/2 oz each) vegetable broth I substituted water for this, it doesn't add that much flavor
2 medium carrots, cut into 1/2" pieces I didn't peel these but you can
1 medium potato, peeled and cut into 1/2" pieces I kept the skin because Glenn likes it
1 medium onion, chopped I would use green onions and dried white onion, less fumes
1 medium stalk celery, cut into 1/2" pieces, optional
Fresh broccoli, chopped
Sun dried tomatoes (if you feel like it, I don't use these all the time)
4 cups water

1 teaspoon dried thyme leaves
1/2 teaspoon salt
1/4 teaspoon pepper
1-2 tbs Garam Masala
Mix all ingredients together in a slow cooker. Cover and cook on low heat setting 8-9 hours or high heat for 3-5 hours or until lentils are tender. Stir well before serving. 8 servings.

Note: For the truly streamlined, empty-pantried folks: This recipe works just as well when you combine only the lentils, water equal to the amount of broth plus water, salt, and pepper.

Winter Semester

Well, Glenn is done with school, lucky guy. Meanwhile on January 4th I resumed my amazing journey through school. I was just faced with one major dilemma...which class to drop. I dropped my US History class because it saved me about $300 in books. Instead I am taking Spanish 205, History of the Crusades, History of the Near East, and Chinese cultural history. People laugh at me because I speak Chinese with a Spanish accent and I speak Spanish with a slightly Japanese accent. A result of living in the bay area I guess. But I speak Japanese with a Spanish accent, I guess my languages are running together. I am taking Spring courses so that by the time I get into the teaching program I can just focus on that. Right now I have to get a full FBI background check and that can take anywhere from 6 weeks to 6 months.

Glenn got a new job. It pays better than his old one and it is four blocks from our apartment so we will save quite a bit in gas and sanity. My life now consists of working out, studying, and enjoying life with my amazing husband. Ever week or so we have dinner and game night with some of our friends. Well, that is all from here.
